In my honest opinion, this humble italian inspired omelette is probably the most versatile recipe in anyones keto kitchen. It can be breakfast, it can be lunch, and served with a side salad, it also makes a tasty dinner. The other thing that I absolutely adore about frittata, is that it does double duty as a fridge cleaner.
Leftovers lend themselves wonderfully to a frittata
That opened bag of spinach from dinner two nights ago, throw it in. That jar of peppers or olives that only have 5 or 6 floating around…Yup, pop those in there too! You can make it as simple or as refined as you like.
A “Breakfast Frittata” Add some breakfast sausage or bacon, cheese, and some sauteed mushrooms and voila! or If you want to get all fancy, add some gruyere cheese, kale, prosciutto, and a drizzle of your finest truffle oil, and you’re good to go!
IT’S THAT SIMPLE
The recipe that I am going to show you today is our family’s personal favorite. It has spinach, kale, mushrooms, sausage (you can use breakfast or italian depending on the flavor you want), and some cherry tomatoes for that pop of freshness. Then it’s topped off with a blend of cheesy colby jack and parmesan deliciousness.
