      1. You really microwave the cauli rice for 15 minutes? That still seems like a really long time in the microwave…but I’m definitely willing to try if that is really close to what you do for yours!

      2. It’s a 2 and half pound bag…so it’s the really really large one. I also did mention that every brand of rice and every microwave is different, so experiment to find “the sweet spot” that’s right for your taste. However I do understand the concern.

    1. The first time is always a little messy. Once you’ve done it 2 or 3 times it’s a lot easier.. The rice can always be pre microwaved, and the omelettes can always be done the day before and refrigerated also.

  2. If you use fresh cauliflower rice, what cooking time do you recommend for the rice? Thank you!

    1. Sorry for the late reply Emily.
      I would go by the same principles, as in keep checking the cauliflower until its pretty tender but not mushy.
      It really can vary a lot from appliance to appliance.

  3. Hi, when do I add the omlettes? With the scallions and beansprouts? I can’t see any mention, but maybe I missed it.
