
If you’re looking for a great tasting dessert to keep you on track this Holiday Season; then look no further than our PUMPKIN SILK PIE!!
The great thing about this dessert, is that it gets made with simple ingredients, no stress, and can be prepared in 15 minutes flat.
Not only that, you can make it ahead of time, freeze it and then pull it out the day of.
What more could you ask for?
PIE CRUST INGREDIENTS:
- 3/4 Cup almond flour
- 3/4 Cup coconut flour
- 1/2 Cup butter
- 1/2 tsp cinnamon
- 1 tsp stevia/erythritol blend sweetener
PIE CRUST INSTRUCTIONS
- Pre Heat oven to 350F
- Add all the base ingredients into a bowl, melt the butter in the microwave for 30 seconds and mix together in a bowl.
- In a pie plate, press the base mixture into the bottom of the bowl to form a pie crust.
- Place the crust in the oven for 15 minutes or until edges are golden.
- Once cooked take out of oven and set aside to cool down.



PIE FILLING INGREDIENTS:
- 2 8oz pkg cream cheese (softened)
- 1 cup pumpkin puree
- .5 cup swerve brown sweetener
- 1/2 TBSP pumpkin spice
- 1/2 TBSP vanilla extract

PIE FILLING INSTRUCTIONS
- Place all ingredients in a mixing bowl.
- Mix with a hand blender until well combined.


WHIPPED CREAM INGREDIENTS:
- 1.5 cups heavy whipping cream
- 1 tsp vanilla extract
- 1 tsp stevia/erythritol blend sweetener
WHIPPED CREAM INSTRUCTIONS:
- Place all ingredients in a mixing bowl.
- Mix with a hand blender until well combined, and cream forms stiff peaks.

PIE ASSEMBLY:
- Take pie crust out of the fridge.
- Evenly spread pie filling into pie crust.
- Top with whipped cream.
- Finish off with a light dusting of cinnamon.
- Place into fridge or freezer to chill for a minimum of 2 hrs.
- ENJOY!!

we recommend using Carb Manager Macro Counter, it all depends on what brand of ingredients you use…what someone considers a portion size, and even from one macro counter app to another can really vary.

Yes it is, sorry, I had the wrong crust up..I fixed it up now. However, it still turns out great unbaked, just not quite as graham crackery. So either or is fine.
