Just in time for Valentines Day… A Holiday that’s synonymous with Chocolate and Sugar filled desserts, and if you’re living keto/low carb, you’ve probably spent the last month getting back on track from The Holidays; So the last thing we want do is fall back into old habits!
These Raspberry Cream Cheese Treats tick all the boxes for me.
Creamy, Just the right amount of sweetness, a pop of freshness from the raspberries, and then topped off with a rich chocolatey shell. The best part is they are super simple to make!!

- 2 8oz Packs of cream cheese (softened)
- 2 cups fresh raspberries
- 2 TBSP stevia/erythritol sweetener
- 1 tsp vanilla extract
- 1 cup Lily’s Milk Chocolate Chips
- 1 tsp coconut oil (don’t use the liquid kind)
- First we are going to make the raspberry puree by putting the raspberries into a blender or food processor and blend until the raspberries become a puree.
- Place all of the ingredients, except the chocolate chips and coconut oil, into a large mixing bowl.
- Mix all the ingredients together with a hand mixer, until well combined.
- If you have a silicone mold like we do, you can just spatula the filling in and smooth it out. If you don’t have a silicone mold, you can just cookie scoop it onto a parchment paper lined cookie sheet.
- Put them into the freezer to firm up for approx. an hour.
- When they are almost ready to come out of the freezer, you can get your chocolate coating ready.
- Put chocolate and coconut oil into a microwave safe dish. Microwave the chocolate mixture in 15 second increments, being sure to take it out and stir it around until the chocolate is at dipping/pouring consistency.
- Take the Raspberry Treats out of the freezer and pop them out of the silicone mold. Place them onto a wire rack or tray and decorate the tops of the treats with the chocolate mixture.
- Refrigerate until the chocolate has hardened into a shell.
