
Today we are going to show you how to make your own mayonnaise or Aioli if you’re FANCY!
Essentially they are the same thing, the base recipe is generally called mayonnaise, but when you add a flavor to it, it generally starts getting called an Aioli.
The reason we like to make our own is
- It’s cheap
- It’s fresher
- It tastes better
- And most of all….We can control what’s in it.
As you would know by now, mayonnaise is pretty low carb, even from the store. That’s not so much the problem, it’s the canola and seed oils that are in a lot of them. Great if you want a good bout of inflammation.
Now, yes you can get great keto mayonnaise brands like Primal Kitchen, but I’ve got to be honest…I’m not a huge fan of the taste of raw Avocado Oil…Hey, it might be just me! However, I love to be able to flavor my mayonnaise to my liking.
So today we will show you our base mayonnaise recipe, followed by our Chipotle Aioli and then the very basic but super tasty Truffle Aioli.
BASE MAYONNAISE INGREDIENTS:
- 1 large egg (room temp is best)
- 1 clove garlic (minced)
- 1 TBSP lemon juice
- 1 tsp dijon mustard
- small pinch of salt
- 1 cup extra light tasting olive oil (you can use extra virgin but I feel the taste is too strong and fruity)
BASE MAYONNAISE INSTRUCTIONS:
- Add all the ingredients except the olive oil into a small blender, immersion blender or food processor and blend for 15 to 20 seconds.
- Slowly start to drizzle in the olive oil a little at a time until you end up with a thick creamy mayonnaise.
- Refrigerate and enjoy! Lasts for 3 days refrigerated.



CHIPOTLE AIOLI INGREDIENTS:
- 1/2 cup base mayonnaise
- 1/4 sour cream
- 2 whole chipotle chilies in adobo sauce (just the chilies not the whole can)
- 2 TBSP lime juice
- pinch of cracked black pepper
CHIPOTLE AIOLI INSTRUCTIONS:
- Place all of the ingredients into a small blender, immersion blender or food processor and blend until well combined.
- Refrigerate and enjoy!! Lasts for 3 days refrigerated.


TRUFFLE AIOLI INGREDIENTS:
- 1/2 cup of base mayonnaise recipe
- 2 tsp of GOOD QUALITY truffle oil
- A good pinch of freshly cracked black pepper
TRUFFLE AIOLI INSTRUCTIONS:
- Place all of the ingredients in a small mixing bowl and whisk until all of the ingredients are well combined.
- Refrigerate and enjoy!! Lasts for 3 days refrigerated.
