
This is not your everyday “Cream Of Mushroom Soup” recipe….Although we have a lot of requests for it, so that is most definitely coming soon!!
This is more of an elevated version of Mushroom Soup, something a little bit special.
We used a mixture of baby bella’s (cremini), shitake, and regular white button mushrooms for a good variety of flavor and texture.
We’ve then seared the mushrooms to give you that rich, umami flavor, added a little bit of thyme for aromatics and thickened it with some cream cheese.
For a little added luxuriousness, we’ve thrown in a dollop of White Truffle Sauce to really fortify that earthy mushroom flavor.
So if you’re in the mood to spoil yourself, and you’re feeling like Mushroom Soup……This is the recipe!
INGREDIENTS:
- 3 punnets of mushrooms (mixed varieties)
- 1/2 medium onion (diced)
- 4 sprigs fresh thyme
- 1/3 cup butter
- 8 cups chicken bone broth
- 1 cup heavy whipping cream
- 1 brick cream cheese
- 1 TBSP minced garlic
- 1 TBSP truffle sauce
- Salt & Pepper to taste








INSTRUCTIONS:
- Heat oil in a large soup pot, over med/high heat.
- Add in onions, mushrooms and fresh thyme, saute until onions soften and mushrooms are starting to go golden. You want to try and get a nice sear on the mushrooms. This will give you a richer flavor.
- Add in minced garlic, stir through and saute for another minute.
- Add in butter, stirring well to incorporate it. The mushrooms should start soaking a lot of it up.
- Add the chicken bone broth to the mushroom mixture. Bring to a slow simmer.
- Take off the heat and add in the cream cheese and heavy whipping cream, constantly stirring until the cream cheese has fully dissolved. You can also use a whisk to help break up any clumps.
- Add in the truffle sauce (if desired) and stir into the sauce to help fortify it with a stronger mushroom flavor.
- Serve and Enjoy!!
