
Some of our meals (especially breakfasts) are just born out of what my boss Dr. Ken Berry calls a “Refrigerator Clean-Out”. And that’s exactly how this breakfast recipe came to be!
My family and I don’t usually fast on Saturdays and Sundays, we like to spend the weekends gathered in the kitchen and around the table, talking, laughing and eating delicious food. Especially BREAKFAST!
This was one of those weekend mornings that I had a bit of this and a bit of that left over in the fridge and had to use it up before it went bad.
And this is the great thing about keto or low carb…..You don’t have to OVERTHINK IT!
Once you have the basics down of what you can and can’t have, it’s pretty easy. Yes, I do love creating new recipes, or making keto versions of the foods we used to love eating from our favorite restaurants; But I also love doing this just as much! Just simple, back to basics, cheap, clean ingredients, cooked with love and some bacon grease!
INGREDIENTS:
- 12 eggs (lightly whisked)
- 1 pound of our breakfast sausage recipe (or any keto approved breakfast sausage)
- 1 onion (diced)
- 1 red pepper (diced)
- 1 green pepper (diced)
- 1.5 tsp our Sazon Recipe (or 1 sachet of Goya Sazon if it doesn’t offend your keto)
- butter, oil or bacon grease for scrambling the eggs
- Shredded cheese and Guacamole for topping. We love the Herdez Guacamole.
INSTRUCTIONS:
- Heat a large skillet over medium heat and add breakfast sausage. Cook for 2-3 minutes or until the fat starts to render out of the sausage.
- Add in your onions and peppers and sauté until they all start to soften.
- Add in your sazon, stir well and set to the side.
- Add butter/oil/bacon grease to a large nonstick skillet over medium heat. Once hot enough, add in your lightly whisked eggs, and scramble them to your liking.
- Season eggs with a little salt and pepper. (keep in mind there is plenty of seasoning in the sausage mixture)
- Portion out the eggs into bowls, add grated cheese and top with the sausage mixture.
- Serve with guacamole and some extra cheese!
