
All the taste of Stuffed Peppers in a hearty, warming soup.
This has always been one of my favorite recipes growing up, it’s quick, easy, and feeds a crowd.
Adding in Italian sausage and fire roasted tomatoes really bumps up the flavor.
I guarantee your family is going to love it!!

INGREDIENTS:
- 1 pound ground beef
- 1 pound ground Italian sausage
- 2 large green peppers (diced)
- 1 large red pepper (diced)
- 1 large onion (diced)
- 2 14.5 oz cans fire roasted tomatoes (keep liquid)
- 2 15 oz cans tomato sauce/puree
- 4 cups beef bone broth
- 1 TBSP Worcestershire sauce
- 2 tsp Italian seasoning
- 2 12oz bags frozen cauliflower rice (prepared SEE BELOW)
- 2 TBSP oil/lard
- salt + pepper to taste
- grated cheddar cheese for topping
PREPARING THE RICE:
- Microwave the cauliflower rice for 10-15 mins. Every microwave is different (Rice should still be a little al dente, as we are going to cook it in the soup for 30 minutes after)
- Place rice in some cheesecloth, twist and strain out as much of the liquid as possible. (This step removes a lot of the CAULIFLOWER TASTE)
- Set aside


SOUP INSTRUCTIONS:
- Add oil/lard to a large saucepan and heat on high.
- Add in the meats and brown them off.
- Turn heat down to medium/high and add in your diced peppers and onions and sauté until onion is starting to soften and go translucent.
- Add in your fire roasted tomatoes, and stir until fragrant. About 2 minutes.
- Sprinkle in you Italian seasoning and stir to incorporate.
- Now add in your tomato sauce/puree, and your Worcestershire sauce. Stir.
- Followed by the beef bone broth, stir to incorporate. Now dump in your prepared cauliflower rice and mix well.
- Turn down your heat to medium/low and bring the soup to a simmer and cover with a lid for 30 minutes.
- Taste soup for salt and pepper to your liking.
- Serve with grated cheddar cheese.

Y r we keeping the liquid from fire roasted tomatoes? I don’t see it anywhere later.

Most people drain the liquid from the tomatoes before pouring into the ingredients as to not make it too liquidy, in this case you want to pour in the whole can liquid and all.
