
As we are once again edging towards warmer weather, and day light savings is now in full bloom, my days are getting longer and busier. Spring cleaning the house, changing the décor pieces from winter to spring, tidying the garage and condensing what we use and donating or throwing away what we don’t. We plan on having another herb and veggie garden this year, so we’re also preparing and tilling the soil for that. BUSY, BUSY,BUSY!!!
Around lunch time, I’m hungry, but as I’ve got a lot more work to be done yet, I’m wanting something light, but flavorful.
A great Wedge, Cobb, or if I want to be really fancy, Caesar Salad, are usually my go to meals.
Substantial, but light, so I can keep working afterwards.
I not only use them for salads, but they also do double duty as a condiment/sauce on my grilled meats, chicken nuggets etc. etc.
Here are 3 Classic Salad Dressing Recipes that you should have on hand at all times, should a salad call your name.
They are made from mostly pantry staple ingredients, take about 5 minutes of hands on time to put together, and best of all….
You know the ingredient list is completely KETO FRIENDLY!!
BLUE CHEESE DRESSING INGREDIENTS:
- 1 cup our mayonnaise or a store bought keto approved mayonnaise
- 2 TBSP buttermilk substitute (recipe below in our kitchen tips)
- 2-4 TBSP crumbled blue cheese (depending on how funky you like it)
- 1/4 tsp garlic powder
- 1/8 tsp onion powder
- 1/8 tsp course ground black pepper
BLUE CHEESE DRESSING INSTRUCTIONS:
- Add all of the ingredients, except the crumbled blue cheese, to a small mixing bowl and whisk until fully combined.
- Add in the crumbled blue cheese and gently fold to evenly incorporate.
- Refrigerate for a minimum of an hour to allow flavors to marry.
RANCH DRESSING INGREDIENTS:
- 1/2 cup our mayonnaise or a store bought keto approved mayonnaise
- 1/2 cup buttermilk substitute (recipe below in our kitchen tips)
- 1/4 tsp dried parsley flakes
- 1/4 tsp ground black pepper
- 1/4 tsp garlic powder
- 1/4 – 1/2 tsp salt (we use Redmond’s Real Salt)
- 1/4 tsp dried thyme
- 1/8 tsp onion powder
RANCH DRESSING INSTRUCTIONS:
- Add all of the ingredients to a small mixing bowl and whisk until fully combined.
- Refrigerate for a minimum of an hour to allow flavors to marry.
CAESAR SALAD DRESSING INGREDIENTS:
- 1 cup our mayonnaise or a store bought keto approved mayonnaise
- 3 TBSP white vinegar
- 3 TBSP grated Parmesan cheese
- 2 tsp Worcestershire sauce
- 1/2 tsp lemon juice
- 1/2 tsp dry ground mustard
- 1/2 tsp Italian seasoning
- 1/4 tsp salt (we use Redmond’s Real Salt)
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp ground black pepper
- 2-6 anchovy fillets (chopped and minced as finely as you can)
** You may say “YUCK” but in my honest opinion, the anchovy fillets
are a NOT NEGOTIABLE ingredient. It’s one of those “hidden ingredients”
that is in pretty much every Caesar Salad/Dressing. It’s what gives it it’s
unique flavor, and really bumps up that UMAMI taste **
CAESAR SALAD DRESSING INSTRUCTIONS:
- Add all of the ingredients to a small mixing bowl and whisk until fully combined.
- Refrigerate for a minimum of an hour to allow flavors to marry.

This is first ranch recipe I’ve ever seen that didn’t use dill. I would never think to use thyme!

This is what we like, more on the “Hidden Valley” Ranch side. But feel free to use it as a base and the herbs that you like.

3-4 days is best to be really safe, but I often keep mine up to a week.
