
These “Spring days” have me wanting to lighten and liven up my dinners, and it doesn’t get more tasty or easier than this simple 10 Minute, from start to finish dish!
Delicate but firm, moist, flaky cod fillets, wrapped in smoky, crispy pancetta, and served on top of flavorful fresh spinach which has been sautéed in the rendered pancetta drippings, with a pinch of red pepper flakes and a splash of red wine vinegar to add a touch of acidity and brightness to this dish.
If you can’t get a hold of pancetta, you can also use thin sliced bacon or even prosciutto.
INGREDIENTS:
- 1 TBSP olive oil
- 4 cod fillets
- 1 pack pancetta or thin sliced bacon
- salt & pepper for seasoning fish (we used Remonds’s Season Salt)
- 1 large bag fresh spinach
- red pepper flakes
- red wine vinegar
- salt & pepper to season spinach
INSTRUCTIONS:
- Season cod fillets lightly (as it’s getting wrapped with salty pancetta/bacon) with salt and pepper on both sides.
- Wrap each cod fillet with pancetta/bacon.
- Add the oil to a large non stick skillet over high heat. When the oil gets hot, add in your pancetta wrapped cod fillets to the pan and allow to sear for 2.5 to 3 minutes on each side. The cod should have an internal temperature of 145 F with a digital thermometer. This should yield crispy pancetta, with the cod glistening, moist, and firm flesh that easily flakes away.
- Set aside on a cooling rack so the bottom of the pancetta/bacon doesn’t go soggy .
- Turn the heat down to med/low and add in the fresh spinach to the same pan you cooked the fish in.
- Sauté the spinach in the rendered fat from the pancetta, add a pinch of salt & pepper, red pepper flakes, and a small splash (about a TBSP) of red wine vinegar. Quickly toss that through the spinach and take off the heat as it’s just wilted down. You don’t want to overcook the spinach.
- Serve the spinach on the bottom of the plate, with the cod sitting on the spinach. I like to add a squeeze of fresh lemon over my fish.
