Sometimes the classics just hit the spot!
These mini meatloaf’s are flavorful and just the right size for individual portions.
Easy clean up and great for meal prepping, if you like to refrigerate food and then take it on the go.
To up the flavor from the standard kind of meatloaf’s, we sautéed our vegetables until soft and then blended it up into a puree, this disperses that flavor evenly throughout the meat, and creates juiciness. It’s also a great tip to hide the vegetables from picky eaters or children who don’t like the site of veggies!!
INGREDIENTS:
- 2 pounds ground beef
- 1 cup pork panko
- 1 cup grated parmesan cheese
- 1 green pepper (diced)
- 1 onion (diced)
- 2 eggs
- 2 TBSP minced garlic
- salt + pepper for seasoning
- olive oil for cooking
GLAZE:
- 1/2 cup our ketchup recipe or store bought keto friendly ketchup.
You can make it fancier if you like by adding a tsp of Worcestershire sauce, some people like to add a little Swerve Brown Sweetener also, but the ketchup is plenty sweet enough for me!
INSTRUCTIONS:
- Pre heat oven to 350F.
- Place a large nonstick skillet over medium heat, add oil and sauté onions and green peppers until softened.
- Add the minced garlic and allow to sauté for about a minute or until fragrant.
- Add the sauteed vegetable mixture into a blender or food processor and pulse into a paste. Set aside.
- Add all of the ingredients, including the vegetable paste, into a large mixing bowl and mix until well incorporated.
- Add salt + pepper to taste. I personally like to pan fry a small ball of the meatloaf mixture and taste it. This will give you a good indicator of what it will taste like once it’s cooked and allows you to adjust seasonings accordingly.
- Evenly portion the meatloaf mixture out into the 4 mini meatloaf trays, and glaze the tops with ketchup.
- Place on the middle shelf of the oven for 30 – 40 minutes or until internal temperature reads 165F. with an instant read thermometer.
- Once it is fully cooked, I like to just broil the top for a minute or 2, just to get it extra golden, but this step is not necessary.
- Allow to rest for a few minutes and then you can carefully remove them from their foil tins.
- SERVE and ENJOY!!
