We all woke up yesterday and Faith Rose was feeling a little under the weather.
One of those end of Summer colds; She didn’t feel much like eating, but said she needed a little something in her tummy, and she requsted her “Get Better” soup.
I was about to post it up on the FB + Instagram site as a suggestion for anyone who might be feeling the same way and then realized that we don’t have one of our most common household staples on the blog yet!!
Well here it is!!
Nothing really needs to be said about Chicken and Rice, every home in every country has a version of it.
Simple, Flavorful, Comforting and most importantly Nourishing!!

But this is your basic classic recipe.
Don’t let the CAULIFLOWER RICE put you off, follow our tips below and we’ll have that tasting and feeling like rice in no time!!
INGREDIENTS:
- 1 rotisserie chicken (meat pulled and shredded)
- 8 cups good quality chicken bone broth
- 2 10 oz. bags frozen cauliflower rice (frozen works best)
- 2 stalks celery (finely diced)
- 1 small onion (finely diced)
- 1 garlic clove (minced)
- 2 bay leaves
- 2 TBSP butter
- salt + pepper (seasoning)
PREPARING THE RICE:
- Microwave the cauliflower rice for 10 mins. (Rice should be still a little al dente, as we are going to simmer it in our soup)
- Place rice in some cheesecloth, twist and strain out as much of the liquid as possible. (This step removes a lot of the CAULIFLOWER TASTE)
- Set aside
SOUP INSTRUCTIONS:
- Add butter to a large saucepan, and melt over medium heat.
- Add celery and onions and sauté until softened and translucent.
- Add minced garlic and sauté until fragrant. About a minute.
- Pour in your chicken bone broth and bay leaves and allow to come to a simmer.
- Now throw in your shredded chicken and prepared cauliflower rice, stir and allow to come up to a low simmer for around 30 minutes or until rice is cooked to your liking. ** YOU CAN ALSO ADD OUR KITCHEN TIP BELOW AT THIS TIME TOO **
- Season with salt and pepper to taste, as all broths are seasoned differently.
- Faith likes hers served with just a little grated parmesan on the top for extra flavor.
